The Fey Realm is a mysterious explosion of creature and color. These cookies are an explosion of texture and flavor!

1/2 cup granulated sugar
1/4 cup powdered sugar
1/4 cup + 2 T unsalted butter
1 egg
2 t lemon zest
1/2 t vanilla extract
1/2 t baking powder
1/4 t salt
1 & 1/4 cup all-purpose flour
Assorted Jolly Ranchers
Beat together the sugars and butter until light and fluffy (you can do this in a stand mixer or by hand).
Add in the egg, lemon zest, and vanilla extract until well combined.
In corporate the dry ingredients in three parts, just until combined (the more you stir, the tougher your cookies will turn out!)
Wrap your dough in plastic wrap and put in the refrigerator to chill for 30-60 minutes (you can also make this dough ahead of time, just remove it from the refrigerator 1 hour before you want to roll).
While the dough rests, put jolly ranchers into individual baggies, organized by color, and crush with a mallet or rolling pin.
Pre-heat oven to 350°F.
Roll the dough out on a floured work surface to 2-3 mm thick. Use a butterfly cookie cutter, or a printed template, to make the butterfly shapes and move to parchment-lined cookie sheet.
Using a round cutter or bottle cap, cut out one hole in each wing, flouring the cutter between cuts so the dough doesn't stick to it.
Spoon the crushed Jolly Ranchers into the hole of each wing. You want to fill the space fairly well so that it melts into one piece of candy glass.
Bake for 12-15 minutes, turning the pan halfway through, until the edges are very lightly golden brown. It's easy to overbake these sugar cookies so feel free to pull them from the oven when they are blonde.
While the cookies are still just a little warm, but the candy is nearly set, use a spatula to move the cookie and make sure that candy nor cookie sticks to the parchment.

*if you want to avoid any bubbles in the glass, make sure you pop them with a toothpick while the candy is still fully melted so as to give it a chance to fill the space with melted candy
