Glass Noodle Jars of Holding

What's up with Ziggy's disappearing act in combat? And will Boko ever journey again into Marion's jar of holding? We don't have the answers to these questions. But we do have a delicious lunch or dinner recipe featuring glass noodles (thank you, Ziggy) and Jars (thank you, Boko). The best part is that you can make ahead and store in the fridge until you're ready to dive in!

6 (16-ounce) mason jars with lids and bands

1 cup coconut milk

3 T creamy peanut butter

2 T soy sauce

1 1/2 T rice vinegar

1 T toasted sesame oil

1 t ginger paste, fresh minced ginger, or 1 frozen ginger cube, thawed)

3 cups broccoli slaw

2 bell peppers, thinly sliced

3 cups cooked chicken, sliced (use leftovers from Eda's Roast Chicken Dinner)

7 oz glass noodles, cooked (we used sweet potato glass noodles here)

Toppings: sesame seeds, roasted peanuts, green onions, fresh basil


  1. Make the sauce by whisking together the coconut milk, peanut butter, soy sauce, rice vinegar, toasted sesame oil, and ginger. Whisk until smooth (It will be fairly thin but, if you put your jars in the fridge the sauce will thicken).

  2. Layer your jars: evenly distribute the sauce among the jars (1/4-1/3 cup each).

  3. Add in the chicken, then the brccoli slaw, bell peppers, and noodles.

  4. Top each jar with any and all desired toppings, or save them for when you actually serve.

  5. Store these Jars of Holding in the refrigerator for up to 4 days. They're the perfect picnic item -- bring a plate or bowl along and just pour out when it's time to serve!
