Traveler's Salad Wrap

Hitting the road doesn't have to mean dry ration servings. Make a quick lunch to-go with these salad wraps!

Prep time: 10 minutes

Inspired by: Episode 16

2 taco- or burrito-sized flour tortillas (the bigger the tortilla, the more fillings you can cram in!)

1 head of romaine lettuce, washed and chopped

1 roma tomato, chopped

1/2 cup croutons, chopped

1/4 cup shredded parmesan cheese*

1/2 cup cooked chicken, choped

1/4 = 1/2 cup Ceasar dressing*

Other veggie ideas: sliced olives, cucumbers, red onion, avocado, etc.

Parchment paper, tape, and toothpicks for packing

  1. Put romaine lettuce, tomatoes, cheese, and chicken in a bowl and toss to combine.

  2. Pour dressing over the salad and toss until combined.

  3. Lay your tortillas out on top of large rectangles of parchment paper and gently scoop a generous portion of salad into the center of each tortilla.

  4. Sprinkle chopped croutons along the top and fold the sides of the wrap up and spear together with toothpick. If you have a burrito-sized tortilla you may be able to do a full-burrito fold and completely seal the ends of the wrap. You can do this but don't have to!

  5. Fold the sides of the parchment paper up and then roll your wrap in the paper until entirely covered, spearing the paper through with the toothpick.

  6. Pack in picnic bag with ice packs until you've boarded your train and are ready to enjoy.

*We built Caesar Salad Wraps, but if you'd like to use a different dressing, consider swapping out the cheese and veggie options, too!
